Good morning, football fades. You are tuned into another episode of the Santa Boot first podcast. This your co host, Jim Marcus. We got a full full house today. When you're bringing food, chef, you're always welcome. So bring food and drop stuff all over the floor. So what you're working table? Wobble table? Now we got a stable table. We got a Santa Yeah, give me, give us. So Chef Tim is the head grilled chef for our Philadelphia Eagles. You Call Me First Cook. First Cook's official. That's his official title, all right. And he's brought us in and look at that. He's been tasting to eat something nice to look at and it's not me. So cheft him has brought in his super bowl ring. It's beautiful looking thing. I'm excited about that. I think I'm a little more excited about what he just dropped on our table here. Yeah, so cheft him is a wonderful chef and he doesn't come out he hate it. He brought in for us some traditional local fair from London. So what are folks, the Eagles fans that have traveled over there, what they'll be eating? Maybe tomorrow morning during the game or prepping for the game watch. It's not morning over there for them. Maybe right now. Maybe they might beat it right now. I looked into some what they eat during the football matches over there and the a lot of meat pies, the hand meat pies. I got burgers and dogs there too, but a lot of people have meat pies and they have like a Mug O Oxo, which is like a beef stock, like a bone beef stock. It's really rich and if it's cold over there, really you know, PEPs them up comes some nice and warm. So I made a traditional British Meat Pie. It's got potatoes and vegetables, two kinds of meat in there. There's some back Bacon, which is what they eat a lot over there, and there's some Sirloin and I finished it off with an English porter. It's a nice rich beer. It's an onion gravy. I hope you guys enjoy it, but yeah, you're some of our fans will beating this stuff in the stadium tomorrow. This is a little bit bigger than what they would normally eat. Like I said, it's a handpie. Usually fits in your hand like one of those small Mrs Calendars, chicken pop pos. You got your hand, but made a little bit bigger one because we got a bigger crew here today. It's big, guys. Yeah, it's big. For Yourself. I will, I'll, I'm speaking for the river, big ASS. That smells unbelievable. It does. Yeah, it really is, or I mean it was a photo finish. I literally pull it out of you oven, made the gravy, jumped in the car and drow of here. So you guys are getting the freshest one I could come up with because I woke up late. So yeah, we're good to go. That's dedication. We appreciate it. All. Worries, mad seeing you guys walk got me something to eat. You know, I wish you folks listening could I wish there were smell of smell of vision, and you know we could push a button smell, because it does smell awesome in the studio here. And it helps because you know, when I'm down, when I'm not feeling good, what makes me feel better? Food. COMP I like to eat my misries away. Yeah, and Gentlemen, I don't know, after last weekend with those panthers, I'm starting to get a little down. I'm not jumping off, I'm true and true, but it's it's one of those seasons where I feel like we're on the edge here and it could tip either way. What if there's a difference between jumping off and being realistic, and I like to stay realistic. You know, I too am a die hard. I had no choice growing up in my house. Had to be an eagles fan and I'm definitely there with them. I'm not going to stop rooting for them, I'm not going to stop going to the Games, but it gets to the point where you have to face reality and the reality is they're in trouble right now. They got to start making some plays both sides at the ball. They got it, and you hate to say it in game, mate, but it's a must way. I think from here on out every game just might be a must win game, especially when you get the conference in Division Games, and I think that's where we stand at at this point. I think the fact that we have division game still...

...is a benefit. All right, we can, you only had the one game against the giant so far, so we still have five division games left, so we could still, you know, take it with the division still our divisional leaves, I think. But I agree they I need the play callings got to get better. The line plays got to get better. I think Doug needs to commit a little bit more to the run game. Last week I think they only ran at six times in the second have something there. But last when you when you're up, when you have a lead, that's what you expect to run the ball. Yes, and we saw that lead and it's away. The Boy Corey told us, hey, we don't have to worry about the RBS. Well, I guess what. I think we have to worry about the RBS. so that's seventeen point lead they lost in the fourth quarter. I think we witnessed one of those in person. To Seventeen, two, three, though, down in Nashville. It's it's like it's like the sixers. They don't know how to finish a game. What's going on with that? It's they're getting away from you watch the game in the other night, the Thursday night game, where Houston got up and they didn't take their foot off the pedal. They just kept scoring. MMM and it seems like both sides of the ball left gave up a little bit. You should have been running the ball, you didn't play. Calling was suspect, and then the defense just went into a prevent defense, it seemed like from when they came out of the locker room start the second Ave. Yeah, it was. I think the difference between last year and this year is the defense. Although they're giving up leads, which they did not do last year, they're still playing good enough to win, kind of, sort of. But the offense. The offense is just not scoring the points that they need to score. Last year they were rolling teams. It's happened once so far this year. We're not rolling anybody on offense and that's got a change. Yeah, seventeen points isn't enough and today's NFL to win a game that you got to put up more points. And you know, going back to last year, you know late in news games when they had these big leads, they had a guy that they could rely on to ice out the game, you know, the Garau Blunt. This year they don't really have that. That's why I don't think we see the running game as much in those second hands when we have the lead, which is really starting to hurt us. Yeah, Jason Kelsey said this week, said seventeen points is not enough of this league. We have to do better, and other players came out and made statements. Coaches made statements. I'm not sure that I agree with Doug statement that the pressure is off. This is Philly. I don't think the pressure ever comes off in Philly. Yes, no, see some shaking heads. I don't think the pressure comes up. I love that we got the bowl, I love it, but this fan base. Now you told us the new norm is to win. Yeah, pressure is in off. Yeah, when you when you make that statement, granted, he was all caught up in the moment at the parade and what not, but when you come out with a statement that this is the new norm, well, you got to start living up to that. I mean, there are so many things to go into the season following a super bowl victory. You know, it's an extended season, you're on that high. People are demanding more of you, more of your time, you know, doing extracurricular activities, that sort of thing. So I get that part of it. But Doug has been there before as a player, as a coach. Was He there as a player? Yeah, with the with the packards, packers, and he's you know, it's so he has that experience on their is belt. It's up to the players, of course, to listen to that voice of experience and to do what that Voice of experience is telling you to do. It's something to players that do it. But if you're going to say that, then you've got to start coming through and and, you know, leading the way, living, you know, showing it by example, that sort of thing. And the players have really got to start to pick it up and they've got to get they got to get off that super bowl hangover, high, whatever you want to call it, and they they got to start buckling down. So if there was pressure, who do you think the pressure was on? That is coming off? Who's what's your major concern for this team right now? Maybe I guess, if I can rephrase the question, what we talk about, we have a super bowl ring in a meat pie sitting on our tail. That's not a concentrate with, oh my gosh, the porter reduction sauce. Make the AFFRI in Sane. Okay, no, Um, let's see. Watching that game, soon as the Carolina got that first touchdown, I was like, oh no, because the main difference I see in this team from last year, other than just closing games out, there's no killer instinct and there's no like next guy up, where are? I'll take over and finish it. They kind of look like they're looking around and waiting for somebody to finish. The offense is looking at the defense to finish, the defense is looking at the offense to finish, and that's why they keep losing these closed games. How do you give up a fourth and fifteen to Tennessee? You look around and wait for somebody else to make the...

...play and nobody makes the play. So that's what I see right now. They still have the talent. I know they're banged up, there're still a very talented team. They're just kind of complacent right now and they're just looking around for waiting for the other guy to make the play. They of the ability to put teams away if they want to. I mean Carolina was not in that game until the fourth quarter when they got the touchdown. I don't know why they went into a prevent that early. I mean you don't have to go to press, but to jump into prevent it's just near. We're not very good at press. Seven seventeen points is not enough to all of a sudden just go into a prevent. And this nfl you can go to prevent me when you're up thirty one, but that's just too early. So they have a lot of work to do. It's not over by any means and they still have the town. Carson is having actually a phenomenal year right now. I love the way he's playing. That was my big key, which kind of sounds like a loser's mentality. My home only key this year was that he comes back healthy and looks like the same Carson Lens because he's your future, all right. It's very hard to get back to a super bowl. There's reason why people don't repeat that often. It's very, very tough to get back there. It's why the New England Patriots are the New England Patriots. Yeah, all right, but they have to basically look at themselves and somebody has to step up and say, all right, I'm going to make that play. That's why that motto we all we got, we all we need. It's why it works so well actually, for somebody was willing to step up make a play. A different player was making a game change in play each and every week. That's just not happening right now. So I know we talked in one of our prior episodes about what defines success the season with being super bowl champs and everything, and you said Carson, Carson being healthy, getting back to that MVP position, and I think he's along that PA, but I am he's got me concerned the season with protecting the ball. Yeah, he does. He has a fumble every game. He may not have lost in every game, but he has a fumble every game. Now some of them may have been the offensive line not giving him enough time and him he seems like he's trying too hard to keep plays alive when he should just be making the decision to throw it away and get to the next play, and it's costing them. So I am a little concerned with his decisionmaking right now. And he's coming he came at this week and said, did you know? We took our foot off the games. We need to get better. So it I liked it. The whole team. We're all we got with, all we need. They're all together in this. They're all taking blame on themselves, saying we just need to get better and they're not pointing fingers at each other. But I think that Carson's got to do a better job of protecting the balls. Is What I've been seeing over the last few games. Yeah, yes, that that is something that hasn't happened up to his season. Now it's only his third year, but the first two years he was here we did not see that very often from him and that is a concern that's crept up in his game. That came literally came out of nowhere, because we haven't seen that before. That needs to be corrected. I I agree that there's a couple outside circumstances that are contributing to that. Maybe a line whatever. Up until that giants game I was thinking maybe he wasn't quite bad and he was a little hasn't in about running, whereas last year, to year before, he just would have took taken off. So I was a little little concern that he wasn't quite back. But then that giants game happened and I thought he was back and he looked. He looked phenomenal. Dj and I were texting dooring a game and DJ was saying that, you know, he's looking like he needs to be considered for for a possible MVP votes this season, and I agreed with that up until the last couple minutes at a game where everything just blew up in our faces. And that that's that was really concerning the to watch that happened. Number one, see the defense give up that lead and number two, Carson presented the at the opportunity to win the game and he didn't take advantage of that opportunity. You know, he missed Wendell smallwood in the flat. That would have gotten a first down. He was at that point. I don't think it was necessary to go for the touchdown. Get that first down then gives yourself four more shots at the end zone. I think he needs to take the play as it's presented to him, not necessarily go for that big hit. You know, get get that small get to get the little thing first, like the past at Wendel small would correct to give yourself for more shots at the big play instead of only two shots at the big play. It seems like he's just trying to do too much. I think he knows, you know, this offense it doesn't really have the firepower that it did last year and we saw late in that game where he's for some passes in the end zone to Earth's and Al Shan when, like you just said, he could have dumped it off into flat to its small wood. You know, maybe he doesn't necessarily trust these guys like out of the Backfield,...

...like you know, we had last year. You know, he rather forced those passes to Earth's or Alshan, guys that he trust to go make a play. You know what I'm saying. So maybe that's a problem. Maybe he's not trusting his guys. So that it gets back to the question of pressure. Yeah, the pressure is off. It seems like Carson's bringing more pressure on himself and with the record that they have and seeing some of the deficiencies, I think the pressure built and that's what that's how it goes in the city. I'm sorry. Yes, yeah, we expect. I think he's relying too much on to individual players or to now Shan Yep. I think he's definitely relying too much in those two. He needs to spread the ball around a little more, if for nothing else to take the take the defense away from those two players, because I think the defense is concentrating on those two players, knowing that's where he's going. You know, we don't need to bother with with these other players, because chances alre heays not going to go there. CHEFT him. Yeah, I'm sure we got I'm just this is just how my mind likes to different deround my own conversations. Did these guys, I know when you were in here last time, you should certain guys have like meals that they have every day. This is do they start to change their bells and try to are they superstitious? Should think you know what I've been eating, cereal. I've been eating oatmeal with raisins the last three weeks. Let me come in and get on. Let let me get Jeff Tim to make me up an I'm with this morning and see if that turns it around. You see the eating habage change in the any I would say I see eating habits change more during training camp than I do during the season. During the season, once once you get your fifty three locked in, those guys tend to lock in their their diets. They tend to stick with, you know, stuff that they know that they eat on a certain day. Our nutritionist has a plan for them when they're when they're doing their carb loading. You know what's going on on the field or in the weight room versus what they need to, you know, consume to help rebuild the muscle due to recovery, how much protein they're getting. All that's you know, they're in place on an individual basis. You may see some guys edited up, but they've got so many choices and that in that cafe and so many different things that we're bringing to him. You know, I would say I don't see that much shifting. Like I said, once they lock in on the season, they're pretty much locked into their diets. There's been a lot of changes in the cafeteria for a lot more options. If you want to go into that, we can go into that or you want to stay on like an individual discussion of die we can do that too. I don't need you to give specifics. I don't want to. I don't see bill the beats behind the does there, but I like his coury stories. Rounder still the beans. Yeah, you're out and they toss you out anywhere. that. He's Corey. Corey wants to ball. Corey's hungry. It's Corey. EAT more red meat. That's like that. Think Corey's nice and lean. He's also mean. He's eating. He's eating really well. They're all eating really well. You know the options available, nutrition wise and die wise are all there. They're all in place, from the fuel bar to the smoothie bar. We have a clean eating station this year that the guys take advantage of, and what I mean by clean eating, if anybody out there doesn't know what that is, is these are all items that are prepared in a way that you're not adding any fat or sugar or anything to them. A lot of them are just fresh, whether they're raw vegetables, there's a lot of grains involved, there's a lot of just like lean meat and stuff like that. There's a station set up for that. Every day. You know, in addition, we have, you know, regular stations where there's hot press sandwiches, there's a Deli, there's a full salad bar with all these composed salads. We just added a pizza of them where we're doing not only pizza every day, because we don't do pizza every day week. We can't because, I mean, let's face it, you know, if all of us a peach every day, we wouldn't be our best. Imagine the NFL eat. This body's built by people take advance pezz and sit on a couch and and yell at the TV or be in the stadium and do that. But when you're on the field you can't consume all that pizza and just go out there. So we've limited them to pizza three times a week and then we're doing light baked Pasta's and we're also doing like Cedar planks, Salmon Out of a pizza of and you know, hot toasted sandwich is stuff that doesn't have a lot of cheese but has a lot of flavor. Doing a lot more Greens and grains. Greens and grains is a big thing this year. So so there's just so much going on over there that you know if they do all through their diet. I see it more at breakfast. If a guy was getting a bunch of Bacon in a huge hamlet and he needs to cut back, you'll see him going more towards the you know, add some avocado in there. They might go get a smoothie instead of the Omelet and stuff like that. So so there's guys we see huffing and puffing at the end of the game. Maybe maybe they got to cut back on the Bacon. Maybe they go and they have more smoothie May and they know that and then and then I am made aware of that. nutritionist knows that. There's there's body mass and analysis every week, almost every day, and they keep them on track to either maintain their weight or gain it if they're losing it, or back off if they're gaining too much. I got a question for you. Has the mood in the Chale Line changed at all? Is it more dour, they more pissed off or be talking because of what's going on on the field? Correct, I would say in the Novacare Complex,...

Eagles novacare complex, the mood Monday's is mood day and the rest of the week is like let's go, let's get rolling, and I don't see them that much on Monday. It's their day off. A lot of them do come in for treatment. Some still come in to work out, but you know, based on what happened the day before, Monday's is like the mood day with the rest of the week. They are focused. They are focusing there on to the next one because you know, I think we all know this in the NFL, if you constantly focus on you know what happened, like you need to learn from your past if you need to fix things, but if you just dour and you're down on yourself, the next time you go in there you're not going to give it the hundred ten percent effort that it needs. So we try to keep them happy in the cafe. We work towards what they're doing. This year we introduced player spotlight of the week where we started doing like special meals for Lane Johnson, he had some venicine in there. We did one for Brandon Graham, which was some pork chops would like smother with gravy. We've done some healthier stuff. We did a Zach Ert's option that he put out that he wanted these burritos that were like Greens and Greens again, really lean protein. Malcolm Jenkins did a day with like Indian food because he's very big into the Vegan there's a lot of opportunities with Indian food do that. So we've expanded what they eat and the choices that they have. But the mood just you know, the cafeteria, that's their home. They come in there, they can get what they need, they can ask for special things. The coolest thing this year that I've been doing is I've been talking with Jordan Mulatta about things he misses from Australia and slowly but surely we are bringing these products to the Novacare. So there's things in there like chicken salt. You guys over here at chicken salt. It's a basically something they use in Australia. They put it on French fries, they put it on a lot of stuff. He puts it on eggs and everything. It's like chicken base, you know, concentrated chicken stock that we have like in a chicken base here that I use combined with herbs and seasonings and they just sprinkle it on like it's salt or pepper. So we've got that in there. We've got some wheat BIX, which is essentially like a dehydrated oatmeal bar that you put into a bowl and you hit it with milk or or hot water or whatever and it just turns right back into like this really nutritive, protein laced good stuff that they like to eat. We're getting in vedge might lay you get it, get some vegelated in their vege might in the other day and he's spreading it on toast every morning. And so it's interesting in the food choices. You know from Australia there's a couple other all these there too. We got a guy on the staff. We Got Cam, you know, the kicker here, not the cutter to punch or sorry about that, but I find it interesting that a lot of the guys are willing to try some of that stuff. So now everybody's using the chicken salt. It's not as salty as you would think. It's just like an additive, just like any other seasoning we would use, just particularly you know it's a big thing in Australia, but it's interesting to try to tailor food to these guys. I've also started doing a sandwich of the week and Game Day magazine for players. So we didn't want for Carson. We did one for Brandon Graham, Jason Kelsey, Jordan Mulatta and I got one for Darren sproles. Coming up for a next home game we're going to do we that like a meat ball sub with Broccoli, rob roasted garlic and three kinds of peppers. HMM. So it's good stuff and, like I said, I can't speak too much to what's going on outside of my realm. My realm is that kitchen, my rooms at cafeteria. My realm is to make sure these guys get what they need. But they are locked in on those diets. We brought some flowerless tortillas in for Nick foles and Carson and they stud felt. They've been and big on eating stuff that's not so much corn, not so much heavy, you know, starches in it and stuff like that. And a lot of that stuff is taken off in the cafeteria to the point where people come in and ask me for the foals rap, you know, they've nicknamed it that so nice and of course, devour the competition is always a standard that's been around. I've been sending you those I find it easier to just tag you on Instagram then send the whole post over to your even yeah, that's my point, and then you just grab Chare send it out. Yeah, so that's been that's been pretty good. I've been cooking some good food. We just did some southern Fried TRIMP for Jacksonville. I wasn't going to try to touch British fish and chips. There's no way. I mean I could do it and I could do it well, but not as well as they're going to do it in the UK. So I said, all right, well, let's focus it like it for Jacksonville. That's a home game, you know. Yep, they're the hosting team, even though it's in another country. So we said what's big and Jacksonville they got garlic crabs down there, but, let's face it, is a huge mess of garlic rabs is going to be pretty messy. These guys don't have a lot of time to eat. I saw that shrimp was something that was huge down in Jacksonville. The guys do it a lot of tailgate down there. It's in the stadium, it's available for you to buy. So we did a southern Fried TRIMP's amazing. I think we went through like a hundred fifty pounds of shrimp and an hour. An hour okay, and that the players have the option to getting it steamed or fried. We try to give them the steam before practice. They have a second lunch after practice with him coming and get the fried. So I can limit what they have when they're having it based on what nutrition wants me to do. So that's what we do, whereas our staff had access to the fried trimp the whole time, and that's where that hundred fifty sound. So I love our staff, they...

...love our food and I just love the whole organization. So behind them every step it away. I think they're going to improve and I'm doing my best to make sure that whatever we can do on a culinary standpoint get some where. They need to pay. Think I'M gonna trying to weave a second one Shin to Mike. Yeah, right, it's a big thing. You'll coach. You picking up any pointers over there for your team meals and whatnot? Oh yeah, absolutely, do you do? You Cook for the team. You do it like that for your team and we have a great staff of dedicated parents. So the day, the night before the game, there's a team dinner and the parents bringing food and everything to eat as a team. It's just out at the school. Yeah, so right after practice, after the walk through, these a team dinner. Really, that's a cool I parents are really I mean they really are really great. I didn't know they would do that on the high school level. That's cool. This is our special carrol, excuse me, you really want to get into that? Where I went? Oh yeah, we're time. was playing. I didn't play and play, but I went there so I can root for them. Let's get back to the pros here. Talk about the pros. So we're in, I say we're in Jacksonville, actually in London. These London Games? Yeah, I don't know what to make them. It's last weeks game. Tennessee's out there and then there they go. Tennessee's at a bad stretch right now after they whooped on us and they're going for to. They get two shots at it instead of trying the game away. Yea. So I don't know what to expect tomorrow. Honestly, they should win. Jacksonville's down on their luck. Jacksonville hasn't been playing well. Who knows who the quarterbacks going to be tomorrow. I'm expecting to win, but the whole London thing just Adam it confuses me at that. That's a great point. I don't know what to expect tomorrow either. You know, in my mind I know what to expect, but with the way they've been fumbling, literally fumbling away games and not playing up to expectations, I have no idea what to expect tomorrow. I'm in a pool at work every week. I've picked the Eagle so far and I've lost four out of seven times. You know this because you have to pick all the winners. They're driving me nuts with the way they're playing it. They're they're so inconsistent that the given up the lead late in the game, whether it's on the road or at home. I don't know what to expect tomorrow. On paper, we should go there and we should kick their butt. However, I don't know about that. Well, when you look at the way shifts and stats on paper and well, yeah, when you look at the way Jacksonville's played the last few weeks, we should go over there, we should take care of business. The problem with that is a nothing is playing out according to plan so far this year. When we beginning of season. What do we I think I had them undefeated going into the into this game. Or maybe one, Babe, one or two losses, but not more than two. I think this is what I predicted for my super bowl match up the eagles in the Jacks. Yeah, maybe. And and you know Blake Bortle's speaking of high school. Looks like high school sometimes out there, but he goes over to London and he looks like an MVP can to day for or whatever. But you know he's three and Oh when his last three games over there. So yeah, it's if we look at these teams, pick them on paper. Offensively they're both at the bottom, towards the bottom. Jager twenty thirty yards per game eagles, or nineteen points per game jags, or Twenty Nine Eagles or twenty two. Jags are scoring a little under seventeen. We're scoring about twenty two points. But then you get to the defense. The Jacks are still second in defense and yards per game given up, where we're fourteen. MMM. I look at the defense and I think our defense is better, except for the secondary. But it hasn't shown that way and it's the Jaguars came in is probably the the top rated defense or the or the vikings that were the vikings. When you start at the season. They just consistently put out a good defensive product. But then again, the strength of our day was supposed to be the line, and they're dropping like flies on the line. Losing Timmy Jo again is really earth the more than yeah, let mean and not we haven't seen not a in forever and now Barnett's down. So yeah, you know, I wanted to touch on that. To it going down. What's the rotation look like now? I guess we have to see Josh Sweat, sweat. Yeah, and we're going to see a whole lot more prob what's his name? Seventy seven with the no shoulder by bad better. Yeah, we're going to see a whole lot more of him. So hopefully he is happy now. He's getting the snaps. He's been playing on the inside a lot to the yeah, and he's been effective. Yeah, he's been a fact, he's a kind of guy. He needs he needs playing kind yes, he needs to be in consistently. A rotation doesn't work all that well for him. He needs to be in there and get get more volumes, make a difference right. I want to see Chris long step up. We haven't really heard o. The one's another one. We as having a little bit of a down year, I think, so far, and he had a good year for us last year, but he's been struggling this year. I hope...

...he gets something going tomorrow. I think part of it last year he was he was more of a down plight, like. He only played a couple days. He wasn't relied on consistently, and now he's been playing a lot more than yes he because he has to. Flan made the good comment a few weeks ago that they're an old off they're an old defensive I was going to set you think agees. Maybe it catching up to a couple of them. Well, but I mean they were able to almost do hockey shifts last year. Yeah, I mean they like almost every series. They sent most of the dry preparation stuff and frozen stuff that we needed over in August on a container st okay, these guys have been preparing for this game since they sent scouts over in the early months of the spring could check out England. So all the hank sauce, hot sauce there used to is over there. We sent a case over each of them. All of the the Bacon on the breakfast times are used to is over there. All of the specialty items that they're enjoying. We sent the Australian stuff over from a Latta. We sent a whole bunch of stuff over there and our chef's over there and he's literally going through the kitchen and teaching these Brits how to Cook Philly Style for our athletes Nice. So food is going to be on point over there and I talked with Chef James yesterday morning and he told me that they worked happy to get off the plane, they were happy to be in England, but the happiest thing that they said that happened was walking into the hotel and being able to have the same type of food that they're used to instead of like British breakfasts. You know, if you guys know what a full English is, Yep, it's a lot of fried food, it's a lot of beans, you know, it's a lot of fat. It's awesome. It's like the waffle house of breakfasts. But over there, okay, not a lot of bricks still eat it. They tended. They tend to do it as like a weekend thing because it takes a long time to cook and a long time to eat. But I can't imagine these guys having beans on toast over there and then going to practice. I really can't now. So they're going in the opposite they got their baking over there. They got, you know, everything that they're used to ready to go. So I'm food is on point. You don't have to worry about the food over there. So, yeah, you don't want the offensive line eaten black and white pudding right before a game. I mean they're gonna the hotels going to put up some regional specialties, but normally they'll do that like after the game. They have a road menu that they follow very consistently, especially for away games, and this is the biggest away game we've had ever ever. Yea. So they're there will be specifics that are there with the lean proteins and the healthy carbs, a lot of the Greens and Greens, and then they'll be a little English fair available after practice and stuff like that. That's that's more of their down time when they can try different things. I'm sure a couple of the guys are, you know, maybe getting out in and around the hotel and having having a bite and checking stuff out. I ware. Especially after World War II, you're conserving all your food, a lot of your food that you had at the end of World War Two because of the blitz and everything was all it tinned. So when they finally started being able to do these Sunday roast and everything, they're still in this mindset that we need to utilize everything. So the meat pies came about because you had these leftover. So this one is, like I said, it's the back Bacon, it's vegetables like carrots, onion celery. I didn't put any peas in areas. I didn't want to be too much like a shepherd's Pie, but sometimes I'll add that. I appreciate that. I'm not a peaky fan. I like the other Routepetti's not not the painted cary peef and he's a fan of this Philadelphia. That's her and then there's mashed potatoes and it's mixed together and I like had a crisis of should I mix it into the mash potatoes? Should I layer it? There's two different schools of thought about it. And finally I talked to my wife, who's more of a well traveler than I am. She's like, when I was there it was mixed together and then she tasted and she's like that's actually less greasy than the English version. I was like, okay, well, I dreamed a lot of the Greaseauce. She goes good call. So it's it's actually it's pretty on point. It's got a lot of good flavor in it and then of course that robust English porter. You can taste that in the grave yet gray. Yes, you try the onions. I did it in a cast iron skillet right where I made the the mix with the beef in the Bacon. All the flavors are in there and it really goes well. It's a little bit sweeter because I had a little bit of honey in there to take away the bite of the porter a little bit, but you could still get that bite. So yeah, I had two bites and just sitting here at going into. I'll be honest, I just sit here listen to the Tim talk about to get my mouth to salivate. Yeah, I'm like, if you really like, I tasted the filling this morning. I'm my God, is going to be great not tasting it now with the gravy and the fact that it's been baked in the crust and it just changes inside that crust to more delectable. There's more herb flavor that's coming through in the tomato and the beer and the yeah, it's good stuff. So, yeah, I'm sorry to restaurant here to enjoy it. In as much as I'm a huge birds fan, we're all huge birds fans, I'm a bigger fan of food, I have to say, and it's good because when I go in there, my mind is on the cuisine that I'm presenting these guys. It's not on what happened on the field, it's not on the away game. It's a well, just focused on making sure they're getting quality food, nutritional food, good food every day. So to sit down in that podcast and talk with them about where they came from, their food cultures in the different parts of the country, what they're doing on Game Day, the foods they like to eat, what they want to learn how to cook. It really gives you a backstory to some of these guys and, you know, and their taste and the flavors that they like. So it's just been amazing for me to, you know, not only sit down with celebrities and, you know, wonderful guys like Carson Wentzon, Jordan Hicks and Lane Johnson, but to meet, you know, Chef Robert Irvine. We're talking about doing some stuff with Jose Garsis and stuff like that coming up. So I'm getting a meat through the football team chefs that I've idolized my entire life. My wife was telling me just just give me five minutes using quiet, but the eagles like to put a microphone on my face and let me talk about food. So I'm very blessed, very lucky. Man. That's very cool. You're living my dream. Like I'm a chef at heart. I would, I would, you know, Yep, get out of the corporate world and didn't just cook all days in the corporate world and then I got out and I went to New York City study cooking, came down to South Jersey and then Philly and then, through corporate dining, got to the eagles. But yeah, I used to work in a cubicle and run a computer and you know, I was working in business communications. Quick Question. Yeah, you drop a little nugget. When you were I don't what we came in about. No, no, no, no, all right. Now, where you were from? Yeah, where you grow up? Yeah, so who'd you grow up? A Fan? Off. I grew up a fan of football, God, also as step it down, side step. Blow. Okay, you wanted that. You want to know my real history. I'll tell you this. I wasn't really a sports fan growing up. Okay, I'm a stone cold Geek. After we leave here today I'm going to go to the South Jersey Geek Convention. Right, sound would very and I'm gonna go look at for graphic knowledgs with spider man, an xmen and stuff. I don't wrong with that. I have we that came a football fan, because I work close with these guys. I'll I love this organization and literally when I came into that kitchen, I went in there for the food and I had some stars in my eyes the first few days when mcnabb and those guys are walking through, and that's how far back we're talking. We're talking like two thousand and seven. All right, the first time they came in and they were in their jerseys, I was floored. I'm like, holy crap, I'm cooking, he cooks the eagles but the minute I stopped looking at him as football players and the minute I looked them as these guys are hungry, they have certain attritional needs just like anybody else in the world. I focused on the food and then I focused on the individual. That's something I love to do. You know, Malcolm Jenkins Vegan, a lot of focus on him to try to get him what he needs. Different products were getting in and stuff like that. Some of the prodcs were getting in for Nick foles and Carson Wentz and Jordan Alatta and a bunch of different guys. The more we tune their diet to their individual needs, whether it be nutrition or likes or dislikes, the more we're getting at the core who this guy is and the more we can tailor it to them so that that's the last thing they have to think about. If you're worried and saying I'm on, my diet sucks and I'm getting crap food at my practice complex, you know, if that's something that's on your mind on Game Day, that should be the last thing on your mind. That should be the last thing on their mind and England. That's why cheff James Earles is over there it's why I's handling it. You know, we take it very, very seriously. You know, all of our staff is completely committed to make it sure these guys get a hundred percent. But yeah, to go back to your question now, I wasn't a huge football fan. I will tell you this. I Had New York Giants Football Curtains in my room. My aunt bought for me that. When I was ten, I took down and I think I literally my mother put up white curtains instead and then I drew spider man all over them. I wish I still had them because absolutely cool thing all was horrible it was. I can't draw the same in my life. But you gotta cooking thing to fall back. Oh yeah, well, I got to thank my grandmother for that. My mother lover to death, but I've been cooking for my family since I was twelve because she just wasn't bringing it. You know, she was burning water and under cooking chicken and I don't know how she was doing it, but you know, once I took over my father's like now he gets the Cook thanksgiving. You better be there. He's like, you know, your sister put a frozen Turkey in the other one. Year now. I need you there. He's, they will pay. Wherever you coming from, please be there for thanksgivings like I don't want to go to Denny's again, so that they had to daddy's the year of the frozen Turkey. They went to Denny's. Wow, all right. How are are in house, chef? We got your greats before meals. We had a couple minutes here. Seeing it's it's a boarding game. It's breakfast. What are you cooking for breakfast on Game Day? Yeah, from the office, when he said, you know, I had his dream about how a peanut butter and Juni for sandwich and it's just sick. So the next morning I woke up and I ate that Sandwich and it's a disgusting Sandwich. The sandwich I you had to eat it to find that out. Now I didn't eat it. It's from the show. Listen. Sorry Anyway. So the Sandwich I dreamed up was, I guess I was watching the special on Fakasha bread or whatever, and I'm from Genoa, so I love all ge you know the deal. Yeah, love all gene VECI or Jenoese ingredients. So it's the dream was that it's vacasha bread, Jealous Salami, certain type...

...of Ham, Ham Pesto as the condiment and then Parmejana Reggiato and then peanut butter on top. Right. No, no, peut butter. So I have to eat this. I have to make this. Have a made. It sounds good. It sounds like something we would see. That's why I belive an over at the birds. So that's what I've been waiting for. If I make it and send it to you, will you give it to the players? I'll tell you this speak. You don't have to make it and send it to me. You give me the recipe and I will make it and pull it out of the pizza and I will. I will put it out because that sounds like you know, as long as we're going with the really thin cut meats, lean Fakacha, I'm going to have to try to take out the middle a little bit, make it a little bit of less less carves form. But yeah, we've been doing some really good sandwiches. That sounds like we're run on point. There's not a heavy sauce on. It's a Nice Light Pesta Peccorino Romano. You said Parmeerjan and Parma Genre Rogge. Any any kind of cheese though? All right, and cheese. We thinking like Spec in the preshoot. You're all over that type of stuff. Oh, absolutely. Yeah, yeah, we were doing we're doing fresh pizzas now, with the fresh though and everything. They sent our food service director, Eric Montejo, up to Brooklyn. How he sent him up the Brooklyn to his favorite pizza place to teach him how to make pizza and we got a pizz something at the birds. Now we're making Brooklyn style pizza, the fresh dough, the fresh cheese, the sauce from scratch, everything. And they went and got some from Claudio's Italian market and Philly, south Philly. They went and got some speck and some pursoot and some fresh ricotta, and should see, these pies are coming out of the zone. And the thing is, with the fresher ingredients, I think you'd agree with me, father, absolutely. It's not as bad for you because the dough is fresh. It's not a free processed, packaged, frozen pizza shell or frozen pizza crust. The sauce is fresh, it's quality ingredients. So yeah, these guys can't eat pizza every day, but the stuff they're eating is high quality and lean and just, I mean a melt in your mouth. The pizzas wonderful. So so, yeah, we're restricting them a little bit. But what you're talking about with it for Cacha, we could get that done. It just a little place guy that since the father Coverari Sama, we're doing see that just will beat you want to make sure I spell your name Rybe. You can set it up where you don't you say mass and then that's the aftermasce meal. That could be good. Yet you should do it for yourself. I'M A guy. Yet it's the meal they eat while breaking down film. There you go breaking down film Sandwich. Should we put them on blast on the podcast? Oh, you're not gonna put me on anything. All right, so that.
