Good afternoon, Patty Wax. Thank you for coming out to see us this afternoon at the eagles clinch the NFC east to go to the playoffs. This is the saying of boot first podcast will be here from two to four. We got our guys from the row, homies, you're going to jump on with US too. We're gonna be talking birds. We're good talking food. We talking whatever he did at the end of the decade and all kinds of fun stuff. But first let me open up introduce our first panel. Here I'm Jim Marcus. With me, as always, I have the magnificent Martin's deek. Good afternoon, the other statesman. Good afternoon everyone. Good afternoon, Jim. Can't wait for this thing to get started. And to the right of deek, we got down. We go with down today. That sounds classy. I like it. Donny, Donny Martin, or don whatever flutch your but whatever flip, we're going down today. Donny Marie Martin, I like it. That's good. Cross from down we got our friend chef Tim, chef Tim Lopez, chef of the Eagle's first chef girl, Chef Tim, thanks for coming in an hanging out with it. Thank you so much for having me. It's a pleasure to be out of the kitchen and being somebody else's establishment where I get to do something I didn't cook. So I appreciate that we've missed you. We do more than just sports in the show. Selfishly, I'm a big food geek, so when we hooked up with Tim a couple of years ago, I just like to come in and talk food. I can put sports inside and we can spend two hours talking about food and I think you did a whole episode. We've done a couple had will and Lordly, food and booze, food and booze. There some we started a couple of years ago trying to use the foods that we make in the cafeteria the eagles and also what we put out on social media to get people geared up for the game. What we'll do is we'll do some research into the city and the team that we're playing and look at some tailgate favorites, look at some food favorites of that particular city, pick one and run with it, and the idea behind devour the competition is if you can eat like them, you think like them, then you get on the field and you kick their button. So take a piece of their soul. That's right. So we're going to have on the menu today here a Patti Latch. If anybody's looking for an eagle special. We will have buffalo chicken dip and we're also going to have a sandwich on the menu that Carson Wentzon him self created. Tim You want to give us a little rundown on the WED Sandwich? Yes, the wind sandwich has...

...been a tradition in the cafeteria since about two thousand and sixteen. Carson did invent the sandwich and it's a classic. I mean people are still ordering. He doesn't eat it much himself anymore. Is Diet switched a little bit. But it's toasted multigrain bread. You could do it on a roll or some bread. He prefers to bread some some mannaise, some fresh sliced provolone, smoked ham, smoked Turkey, fresh smoke bacon and really juicy tomato. You put all that together and that's a classic Carson went sandwich made by me, eaten by Carson many times and still eating in that cafeteria. I must make four or five of them a day, every day the week. Very nice. I will be trying one of those today. Oh yeah, and Tim also with the Eagles, has his own podcast. So we mentioned of our competition, but we got the feeding the birds podcast that Tim does with the Eagles Radio Network. Give us a little little scoop on what we what we find on the feeding the birds podcast? Well, we got a lot of different stuff on the feeding birds podcast. Format has changed over the years. We first started off with just trying to get inside the head of our players, are coaches and are staff. Started with culinary staff. We've expanded to other staff in the building just to see what their food cultures like, what they like to eat when they were growing up, specifically for our players, what they ate while they were playing in college, how that change when they got into the NFL and what their diet does to affect their play on the field. In the past couple of years it's really gone out the doors of the Novacare and into the reading terminal market in the Italian market. Met a couple celebrity chefs at a beats and eats event with Robert Irvine and we just are plowing forward and just trying to get as much food culture of Philadelphia and our team as we can on that podcast and really showcase a different side of Philadelphia Eagles football. Very nice. I always like when you have the players on there and you ask them the strangest thing they eat every eat. We should quick that talked about the Rocky Mountain Oysters. They were at the table but he did not try them, I believe. But now was Brent Selik. That was selic are quick. Quick says if it's fried he'll eat it like quick white quick. We'll have you. You can deep fry a hubcap and that guy. I'll take a take a bite out of it. But selek said that Riley Cooper's dad at the time had asked him to try some rocky mountain oysters and he said there's nothing better than that. And sel I said I'll never know because I'm not putting no balls in my mouth. I asked larly if we could get that on the menu for today today. Think it'll be. That's good, being proper fair for today. So we're here, we're going to talk some birds. Like I said, chef him has been with the Eagles for twelve years, not thirteen. Thirteen lucky says Yep. So he was lucky enough to get a super bowl ring when our champions one. So if anybody would like to see what a true super bowl ring looks like, we have one up here at the table. ...team. All Right, the team's rings a little bit more diamond studded. Mind is a little bit less diamond study, but it's still a real deal. It's still still came from the Philadelphi Eagles. It's a classic and it's in a beautiful box. That has a light that actually shines on the wonderfulness of it and let's its sparkle still nice. Go ahead, guard it with your life, Bro it's totally give that man a knife. You Owe me about twenty K of that disappears. So all right, good call. My wife is guarding the ring. So Nice, nice shout out to my wife, Melissa Lopez. Thanks for being here to and thanks for getting me here safe. Coming up the boulevard. We had a couple twist and turns, but we made it. Yes, and it's a little hidden back here, but anybody out there listen to come on out the patty wax. We're hanging out. We're having a good time leading up into the game. So let's touch a little bit on last weeks game. Cowboys came into town. We know it was a win or go home. We needed to get it little shaky in the first half. If you were Jason Garrett and you went in at halftime, what will you tell on that team? Right? Those guys were Godd just need a glass. What I was telling those guys was we're not playing the best, but we're were only. Was it four points behind at the time? Was it ten, six? Yep, and we stole three points at the end of the half. We get the ball to start the second half and we're going to run it down their throats with em and their seek or not, Zeek, Oh my God, I get in already. Yeah, Zeke, Elliott, number twenty one. That's that would have been my game plan. And they came out with that game plan to start the half. And that's when I started to get worried. I said, these guys are moving the ball, Zeke is starting to pick up yardage, doing his thing. This could turn into a long, disastrous afternoon. Yeah, and Zeke, only end of the day with forty seven yards. We got an open one and I don't want to. I don't want to crack your display bottle here. Will get you, will get you, Lad Hook, don't working on it. We're sorry, that sorry, I mean to get all right, so, so, so we have been in sidetrack here. So, Zeke, yeah, seek, like you said, Deek. If if Jason Garrett was worth his salt as a coach, he should have said let's run this ball right, the eagles did nothing impressive that first half. Nope. So, if I'm Jerry Jones now, you got your coach on the hot seat. I don't know Jerry traveled down a half time to tell Jason, but I'm sure he's got his number and I think Jerry says hey, dummy, run the ball, we need to win this game. And they started out, but then he went right away from it. Now our coach, coach dog, and we try not to slander the team too much when Tim's in our presence, but coach dog didn't coach his best game either. That fourth and one shotgun, fourth and one from the ball was questionable to say the least. But end of the day we come out of...

...the win. It wasn't pretty, but a wins a win. A wins a win. My Dad's in the room. He always says that a wins a win, no matter how prettier, how lovely it is. A wins a win. So here we are now, giants up at metlife stadium. Winterer, go home. What are we looking at for today? Are you guys feeling about today's game? I don't know. It depends on what team shows up this they've been pretty inconsistent, I'd say, all season. Both sides of less two or three games they've really showed up a f offensively, especially guys have really stepped up. Greg Ward, Miles Sanders, Evan, Dallas Godder tied a couple of good games and of course whence is really picked up his game, which I know me on this podcast I was questioning them. Yep, for a while that you're the only one. Yeah, I think there's a couple others. We were questioning his game a little bit on is he going to step up? And he's done that the last three four games, so I think he'll hopefully continue that today and I think getting Jordan Howard back is a huge help. Now you can really as alister running game, just pound it down their throats. The giants defense is atrocious. I think they're giving up the second most points the NFL. So if you just pound the rock with Jordan Howard and miles sanders, I would only let whence maybe drop back twenty times and just run the ball thirty forty times and I think you control to the line of scrimmage, control the time to possession and you walk out of their little win and you're looking at a home playoff team. So we know what Jason Kelsey said after they won the Super Bowl. Hungry dogs run faster. Yep. So, Tim Yo, what did you guys do right they they went on a little bit of a slide. Did you just stop feeding them? To the trainers come in and say look, feeding, did you stopped? Traders came in and said, look, it's only oat me on Gruel for these guys. We got to get these guys hungry again and they turned it around and that after that Miami game we were all feeling a little uneasy. No, no, Gruel, I think. Well, we like to do is, you know, morale is affected by quality of play week to week, but you have to get past it get focused on the next game. So what we can do is we can celebrate the hope for the future with better cuisine. So a lot of the times what we like to do after a loss or a letdown is we give them some we give them you know, hey, we're going to give you some top quality stuff. Bring more top quality stuff when you hit the field next time. You know, and it's not put that way in words, but I'm putting out lobster tail or grill. The oyster was our lamb chops or whatever. It's the way we can show that you know we're going to make you really good food and now take that, take that protein, take that energy from that, put that to work. Maybe that's go out there windows games. It's it's the carrot instead of the stick. Right, yeah, literally, right, my poking anybody that sticks. I'm not here to injure. I'm only here to help. You know, think that like the hypocratic...

Let's talk about Eagles real quick. I want to know who in the organization had the you know, the wherewithal in the fourth thought to go ahead and sabotage their playing after the game last week. I thought that was that sweet. That was class. Not only did you lose, we're not going to let you go home to stay a little while longer. Do you think so? Jason Garrett is as a local guy, right, we talked about this before. Do you think maybe that was Jerry's way staying? Why don't you stay here? I thought I stay around when you saw Jerry leaving. Maybe Jerry did. Maybe there's like, you know what, maybe you guys even think about this for a while. We do. We do have a cowboys fan hiding in him somewhere. He's in the back. Woo, that way in the back. That well, maybe he'll come up later. Initials, MK, because let me just reset. We are here at Patty Wax Welsh hanging out leading up into the eagles giants game. We're gonna have some trivia going on door in the breaks. We have food specials, we get pop specials. We're also selling some fifty FIF s for the Archbishop Ryan trackt heed. Yes, I'm taking advantage of that. We got the Super Bowl ring on display over there. If anybody wants to see with the real super bowl ring looks like. Take A walk over after the corner. Take pictures of the ring, not me wearing the ring, because you know, face value is everything and when you get my Mug in there with the ring, he's your picture quality'll drop. So so the last time we face these giants, It was here on Monday night. It was Eli and we were a little worried after coming out of that Miami lost that maybe this is Eli Swansong. He gets a win and he rides off into the sunset. Didn't happen. Carson again late, come back when and that's where it kind of started. And we had the REDSKINS. So the team that we're going to see today is not necessarily the team that the eagles saw on Monday night. Yeah, Danny Jones at quarterback and he I think he's second in the League and turnovers. We need this defense if we're going to get into these playoffs. Defense needs to step up. They did last week. No touchdowns. This secondary was still a little questionable, but Sidney Jones end of the...

...game makes a big plays. Best playoff season. It's career that I was saying the same. That's probably a good statement. Career put it in there. So who, what side of the ball, are you expecting to really step up today? Who Do we need the step week today? I guess his another question. We need the defense is step up today. When when say Quan's on the field, he's got to be shut out. Its just like last week. It all started with shutting down Zeke. This week it all starts were shutting down say Quan. If we can get them three it out as often as possible, that's you know, of course the corn to be in our favor. We got a limit the damage. That guy slate and came out against US Monday night would Eli and just started just, you know, bombs all over the place. It was. Yeah, I think he had two touchdowns and over a hundred yards in the first half and we're you know, we were in the stands like what the Hell's going on here? That this dudes ancient, he can't move quicker than a phone, telephone fall, and he's just laying it out there and destroying our secondary. We know we have a bad secondary, but we should be able to at least cover two giants receivers. They're not that good. You know it. Fortunately, they made adjustments at half time and it came out and they got the job done. They started getting to Eli, they took away to you know, those long passes in our offense came around and woke up. As much as we need our defense to step up and stop, say, Quan, our offense, they need to. They need long drives. When you have those long drives, you keep that offense off and you, more importantly, I think, are just as importantly, keep our defense off the feeling and keep them fresh for the fourth quarter and say corn's been rolling the last couple weeks. He had dy he's back, he's healthy. I think they realize that this is really the only weapon we have right now. Their offensive line is suspect. Our Defensive Line we get we get BG in there mixing it up, your boy Dj Josh Sweat. Yeah, he's heard of it. On. I think you have one sec last week. Yeah, we got in there a couple times. I know that. So we could get that defense going and keep, say, quand and check like they did Zeek. Yeah, that's the only way you're going to win, because that PAT that the giants kill us, it seems every time recently with the quick gets, slants and then quick passing games. So if you can contain Zeke and then for Daniel Jones be I feel much better about the game. But if that passing game it gets rolling and say Juan's gashing twenty yard runs every three runs, I mean it's going to be a tough win. But yeah, they have to containe. ...lions one yesterday. Every time Ohio head and they played for Co Memphis. Ohio state loses last night and I'm just going to assume, I was said to see that that the sixers one. Right. Can I just make that assumption? Now, because I was I was watching them. How to don't F with cats, a wonderful netflix documentary if anybody but I just assumed, after beating the Milwaukee Bucks, that we got the east wrapped up. So I didn't really watch the sixers game last night. Is it safe to assume a one? No, no, no, they lost it to the heat, terrible walls, all right, and also to night before. Don't forget that wall. Wait, they lost two in a row. Yeah, all right, let's get back to everyone, and beach shows up when he wants to show up. Let's get back to the Eagle's head. Good idea. All right. So Carson has thrown for four hundred yards his last three starts. Dj A, sound that. You want a heavy run? Yep, he's over four hundred offensive yards the last three contest you want to heavy run game today, though, you said. Yeah, I mean, why not Jordan Howard back? Yeah, you get Jordan Howard back, who is your lead back all the season. He's missed six weeks. Get him back in the flow of the offense. Miles Sanders has been absolutely killing it. You get him the ball to he's got the hot hand, and then you only need once to throw the ball, maybe twenty, twenty five times. I think you're fine. You save once his arm for the playoff run. You'll be here over. Yeah, chef till, can't get it. Get I can't get a shot. Maybe, stee, maybe they see you where a and there thinking all we can't have one of our cooks drinking my I don't work here. I don't work here. You stole my recipes for the day. I don't know. So we're talking about the running game again. Not to get on my penn state course, but miles sanders right. Seems like we got our running back of the future. That's the thing. I was over a friend's house last week and one of the guys there was saying, Hey, I think miles sand is just through that he can be in every down back. Let Howard go and just let sanders take over. I don't agree with that, but I mean sanders is proven he can play every down and he's sticking up blitz packages in all he blocks. He's starting to pick up the past blocking...

...game. So He is third in the League and yards per touch, behind Austin Eckler and Christian McCaffrey. McCaffrey's just unbelievable this year. One point he was a cannon for MVP, but I think you need to start talking about miles in the offensive rope of the year. Catle in it and I don't know if he saw on twitter. I'm sure you did. It was starting to come up. I think I think he'll, he should win. Think you starting to promote himself a little bit. I think she got up there last six weeks. He's I think he's like five in all purpose yards or something like that. I mean he's killing it and I think I'll have another big day to day. All right. So we're going up there. Who Do you need to shut down other than say, K One? If you just shut down say Kue should this be a cake will? No, no, not with that secondary who out? So then who else you are you worried about? Every sing yeah, an, he receives late in Shepherd, anybody. I'm worried about the quarterback because you can scramble back there to extend plays and get yards. You can't if you had them in like a third and seven to thirty eight and he scrambles out of it, you know, out of a pocket or it's a rollout. You can't let him run for a first down. You got to get off the field. But I've mentioned a bit ago he's very prone to turnovers. He is, I heard Howlier grambling they going to let him do? Well, it's not going to be a scramble by design. They might roll him out at a pocket by design, but it's not going to be a scramble by design. And you know, I don't know if you have to have a spy on them, to use a term from the from a few years ago, but he needs he needs to be kept in check. You know, if he's going to beat you make them beat her with the arm, not, not his legs and arm. So you're feeling a big sake one day too. Is what you would do if you are a PAT chairman. Yes, yes, I would try and feed, feed, say, Quean, the ball as much as possible. You know, he's he's I always thought a Brian Westbrook as a threat to score from anywhere on on the field, regardless of game situation or how he's getting the ball. I always thought he was a threat to score. I see say Quan in that same light. He's a threat to score anywhere. On Sake ones better than WESTBROOK. They'll be better than Westberg ever. Well, and he's a threat to score from anywhere. We feel say Quan it has hall of fame written on his career. He has that capability. He does, and he's only two years. The only thing is they'll probably overuse them, so his career could be much longer, but it'll probably be cut short because of how much they use in every more. You're he sold O't when any super bowls miss storing that? I'm fine. Yeah, he missed time this year. I mean, you already see it. Is this like again? You're saying you guys win and we're gonna feed you better and better each time. We got to start cranking up. Is it lobster tail every day? Revise every day? I don't know about every day. I say we crank it up towards the end of the week as we get to that playoff game. But for the VOUR, the competition's sake, we're prepared for either team. Okay, all right, if you guys are are curious about, you know, seahawks or niners food? Yeah, that's here. What we want to do first? Which one? Who Do you think's going away? I I think say a frame. We I think we get. No, I think we're going to I think we're going to see Seattle. Yeah, I think so. What's the Seattle men? You look them Seattle Menu. We tend to focus on a lot of stuff from pike place fish market. That's pretty well known place in Seattle, pretty much of Food Mecca there. Last time we played the Seahawks, we did this. Did the fish sandwich then work out so well? So I'm going with another staple from the market. This time we've sourced and come up with a smoked salmon chowder. We're going to hot smoke the salmon on our smoker right in the back there in the Eagle's parking lot out back in the kitchen and make a really delicious chowder with some local produce and just do it up like Seattle Style and put it out for these guys. Have some bread bowls, have a whole bunch of different stuff. Is that served up with a Latte from starbucks? No, no, thanktually. I have a quick question. Do you guys have superstitions of what they eat each week? But do they have that have some of certain meals and we have a superstition that in the kitchen if we make some for the Vour of the competition, we lose that game, we don't make it again. That's like it. Don't see it again. We lost the first Dallas game. I made that that Texas Red Chili with the cornbrewn waffles, which was fantastic, but we lost that game. So the Second Dallas game, chef James Searles and I came up with a house smoked brisket Pastrami that we then made a barbecue sandwich with. So it was a house smoke made Pastrami Barbecue Sandwich, like frozen onions, really spicy pickles on some really good role. It was. It was fantastic, and you know, I'm not saying that the food helped us win that. But now we're we're talking last we're talking food right now. So we're going to bring a Lorelei's. We're right in the middle of talking food. Is Working? Ooh, I'm sorry, she's so we're going to hold up. Guy Lorelei and DJ coming on here. t Mike, I tried to make those hall of Pino Cheddar Waffles. You're going it confusing and I destroyed I destroyed it. It was me destroyed it. Would you do my waffle maker? I don't know. Wasn't hot enough for whatever. Bring I was blake. Blame the machine not to cook. Come on, I ended up making muffins out of it. That's Fineos are good with the Chili. That's fine. Now was it's a good stuff. It's really good. I mean, you know, I've run it before. I've run the Chili in the CORNBREA waffles before and we were we kicked alice as but but sometimes it doesn't work, so you go for a different recipe. That's our superstition in the kitchen. I would say there's not too many food superstitions other than if there are guys that eat the same thing all the time, there we got thank you very much. If there's guys that eat the same thing all the time...

...and they want that consistency on their day off when they come into dual workout and they want to have the certain launch that they eat, or you know, for instance, the Thursday nights is something that they always get, or Friday morning with the breakfast fried rice that we do. That's definitely a superstition in a whole building that fried rice is not there on Friday. Oh It's hell to pay, hell to pay. So I got it. We got to have its eighteen year tradition at the Philadelphi Eagles. The original chef and charge everything, Chef Steve Rome ice. Back when the building opened, I think a two thousand school going on vacation of Hawaii brought the idea for the fried rice back. They did it with spam in Hawaii. decided to do with some apple smoke bacon instead, and it's been every Friday for eighteen years since that building opened. It's been there preseason, postseason, anytime you come in there on a Friday morning, breakfast fried rice. Nice. Right now we want to welcome in our sponsors, our host for today. Is that something that everyone on the team eats, or is that Carson? It goes back and forth. It was predominantly Carson's, but you know when you when you got the quarterback of the Philadelphi Eagles and he designed something and then we make it, a lot of people want to try it. One of the big proponents of it of any player Sandwich I've ever made. I got to give a shout out to friend Duffy. He's got the eagles eye in the sky podcast to that stuff. That guy's amazing. He always hits so sandwiches every time we come to calfe. So what do you want? You want the Jamat, you want the wince? We have one from back of...

...the day with folds his first year with the team, called the wolf pack. That thing was sane. I don't know how anybody could eat that play football. But it was a hamburger with Fried Ham, Bacon, pickles, mannaise, catch up, French fries on Texas, toast with pro bolone and Cheddar, and that thing was solid. Does that come with a free heart? Yeah, evaluate you if you going to put your arm in the cuff afterward and it takes your blood pressure to see of your are right. So that one's been off the table for many years. But but yeah, friend Duffy's a big proponent of the Wen sandwich. He has that thing about maybe once or twice a month, maybe more so. Nice, Nice. So I know you guys are having a New Year's Eve event. And then the next day is our bus busiest day of the year, being New Year's Day, with all the mummery and all the fancy brigades come down and start our trek down second, second street, two mummer's mummers, mummer's lane. They started second in south and find their way down to the mummer's museum and but that's the place to be on on starting at ten I think we open at ten am on South Street on a New Year's Day.
